Recipe #15: Banana Fritters

No work + Meeting in 2 hours = Blogging time.

On Monday, I was on a fruit kick.  We had just did groceries and I wanted dessert badly.  During lunch, I had probably found 5 different ways on Pinterest on how to make a banana and apple dessert.




I emailed Brian the recipes and by 630pm, we decided on which recipes was going to be ours...


Banana Fritters

Ingredients:

  • 6 ripe bananas
  • 2 eggs, beaten
  • 3/4 cup all-purpose flour
  • 3 tablespoons vegetable oil

Directions:

  1. "In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey."
Results:


We didn't have honey at home because I left it at work, so we topped ours with cool whip.  We had a total of 16 fritters and they were gone within 10 minutes.  It was really good!  Too bad we ran out of bananas :-(.
